The Start of Sun Fuji Cultivation

The 'Sun' in Sun Fuji refers to the sun.
It's a variety that receives ample sunlight.
While most production areas harvest earlier than the ideal period to prevent snow damage, Yamagata Prefecture, with its late snowfall, can harvest during the ripe period when apples accumulate sweetness.
The inception traces back to a producer who noticed apples that accidentally grew outside the bags due to wind.
From there, through diligent research and work, Fuji apples grown without bags under direct sunlight saw a rise in sugar content by about 2 degrees, an increase in acidity, resulting in an unprecedentedly rich and delicious apple called 'Sun Fuji.'
After being introduced in Tokyo, it gained high praise, commanding higher prices than bagged apples just in its second year, drawing attention nationwide.

The History of Japanese Apple

It is believed that apples were first introduced to Japan from China around the year 918. 
During this time the fruit was a lot smaller than today's standards and were mainly used for  culinary use.
They were also given as offerings as Buddhist temples. Everything changed in 1871, when a large surplus of varieties was imported from the United States and distributed  across the country.
Regions like Aomori located in the north of Japan took a liking to growing all these apples as they were able to flourish in the plummeting temperatures while other produce like rice could not.
As the cultivation of apples continued to expand over the years, new types were being developed and produced, notably to increase its size.
At  present day it has gotten to the point where Japanese apples are usually larger in size and a  lot sweeter than Western ones.
