Crab soup recipe
Ingredients
- 600ml of water
- 1 canned seiko-crab
- 1 seasoning cube
- 1 egg
- 1 tbsp of oyster sauce
- 1 teaspoon of corn starch
- Salt, pepper and spring onions
Steps:
- Bring 600ml to medium heat.
- Add in 1 seasoning cube and stir.
- Add in seiko crab and the juice (do not waste! it is the essence)
- Add 1 tbsp of oyster sauce egg. Stir.
- Bring to boil and add in slurry cornstarch.
- Garnish with salt, pepper and green onion.
- Serve.

Why is Seiko Crab rare?
1. Limited 2 months harvest season
As an effort to protect population of Seiko crab, Seiko crabs are only allowed to be caught from November to end of the year, during the spawning season.
Since it is very limited each year, it has become a very rare, and one of the most popular and precious crab in Japan.
2. Each one crab is tagged by hand
Yellow tag is an "identification mark" attached to "Echizen crabs" landed in Fukui prefecture, and the Echizen Town Fisheries Cooperative began applying it in 1997 in an effort to protect the Echizen crab brand.

Processing of Seiko crab
Seiko crabs were directly purchased from fishing boats and immediately squeeze in fresh water for 30 minutes and drain in a colander.
Freshly caught Seiko crabs are boiled by crab boilers with skills cultivated over many years of experience, who carefully watch the amount of salt and boiling time to bring out the best flavor of Seiko crabs.
After that, freeze it instantaneously in their cutting-edge freezing machine (3D freezer).
The specialists at Santan who know all about crabs carefully remove the meat from the crab.
Carefully arranged by hand, one by one, with the inner and outer eggs, miso (soybean paste), and meat neatly in the can.
