Exquisite Izumo Matcha
A Culinary Masterpiece with Unparalleled Flavours
Izumo Matcha, a premium green tea valued at 100,000 yen/kg in the market, is a true gem of the tea world.
Its finest season is in late May when the new tea buds start to sprout, yielding the most exquisite tea of the year.
Among the seasonal teas, only the highest quality leaves are carefully selected to create this exceptional matcha, which is meticulously aged until autumn to enhance its flavours to the fullest extent.
Izumo Matcha is sought after as a primary ingredient by various manufacturers and renowned pastry chefs.
The reason lies in its vibrant colour, mild bitterness, and its suitability for creating delectable sweets compared to matcha from other regions.
One distinguishing feature of Izumo Matcha is its reduced bitterness, which sets it apart. When sprinkled directly onto sweets, matcha from some regions can become overly bitter.
However, Izumo Matcha boasts a milder bitterness when tasted, making it perfect for sweet applications, especially when used to create exquisite Matcha Melty Gateau Chocolates.
Its appealing characteristics make Izumo Matcha a top choice for enhancing the flavor and presentation of sweets, leading it to be favored by both established confectioners and esteemed manufacturers.

Commitment to Free-Range Eggs from Izumo
They don't just focus on matcha; they also have a strong commitment to the eggs they use.
Located in the pristine nature of Izumo City, Shimane Prefecture, their eggs come from chickens raised in a free-range environment, where they can roam freely on the ground without stress, instead of being confined to traditional cages.
Their chickens are raised with utmost care, enjoying a diet that includes locally sourced ingredients such as tofu residue from a local tofu shop, corn and green onions from farmers, as well as shiitake mushrooms and premium ginseng, all of which contribute to their healthy growth.
By prioritising the well-being of their chickens and using high-quality, locally sourced ingredients, they ensure that their eggs have a superior taste and nutritional value, adding a special touch to the products they create.
Of course, it's highly received in Japan!

About Tousuien
Tousuien, which includes the affiliated café "Cafe Kokujirou," traces its history back to 1907 (Meiji 40) when Okamoto Kokujirou established Okamoto Tousuien.
The city of Izumo, Shimane prefecture where Tousuien is located, as well as its neighboring city, Matsue, became a place where tea and traditional Japanese sweets culture flourished, thanks to the efforts of Matsumura Harusato, also known as Fumai-kou. Despite the deep-rooted tea culture in Izumo, matcha production was not carried out there.
However, in 2006, under the leadership of Tousuien, they embarked on matcha production, and now Izumo matcha is known for its high quality and excellence.
