About Hirono Farm 4 Years Uni
Rich natural environment with love and compassion
A small town on the border of Iwate and Aomori prefectures in Tohoku is producing amazing sea urchins and it's even about to be one of the top sea urchins in Japan!
The coastal area of Taneichi, Hirono City is a major producer of Kita Murasaki uni. It is by far the largest catch of sea urchin in Japan. In recent years, the sea urchin produced in this area are also known as "Kita Murasaki uni" from "Hirono farm". Michelin chefs from all over the world have come to visit before the pandemic.
Sustainable sea urchin farming
Environmental factors over the years have led to a decrease in naturally grown sea urchin - decline in kelp growth and dirty ocean grounds. Kelps contribute as a main food source for the growth of a good quality sea urchin.
Kitasanriku factory hence stepped up with their own full-scaled sea urchin farm through sustainable farming research and development to solve this issue.
Natural Sea Urchin from Hirono Uni Farm that takes four years to grow~
First year, young sea urchins are hatched by hand and grown till about 1 cm in a tank.
Second year, the young sea urchins are then released into the ocean to grow in a natural environment for two years. After two years, grown sea urchins are harvested back to Hirono’s 15km natural farm - an ocean ground dug 55 years ago which now thrives with kelps that are safe from external pollutants.
Using the knowledge of tides, the farm introduces fresh flow of sea water during high tide, and retains the sea water on low tides. The quality of kelps in this natural farm contributes to a healthy food source for the fulfilling growth and flavours of the renown Kita Murasaki uni.
