From the mind of Takashi Suzuki, the owner and chef of Patisserie Bell, they have vast experience in this field as an executive pastry chef at a 5-star hotel with numerous recipes under their belt.
Through lots of trial and error they were able to come up with the perfect creation of this Basque cheesecake.
Presented as a dessert at the 2023 G7 Summit in Hiroshima where the top world leaders get together, it is a testament to the quality and remarkable taste of the cheesecake.
With each one handmade to perfection, their Basque cheesecake is specially characterised by its melting texture.
The Basque cheesecake experience
The exceptional melting texture is achieved by adjusting the oven temperatures and baking times during the creation process.
There was a long experimentation period to discover the right oven temperatures and timings for the baking, however after numerous prototypes it ended up flawless.
This way, the outer surface of the cake has a satisfying crisp before diving into the core where it is creamy and smoothly melts away in your mouth.
The contrast in texture from the outside to inner layers of the dessert make it an enjoyable eat, and the slight bitterness on top pairs excellently with the sweetness of the cheesecake.

The Journey of Chef Takashi Suzuki
Born in Yokohama City, Kanagawa Prefecture, owner and chef Takashi Suzuki has over 20 years of experience working mainly in hotels and being involved in desserts.
This includes contributions to supervising restaurant desserts, dessert buffets, afternoon tea, wedding cakes, and has built up an admirable reputation.
During his career he has actively competed in competitions and has won over 20 notable awards, including the winning prize in the fresh sweets category at the ‘Kiri Cream Cheese Competition’ in 2011.
They have also won the prefectural governor’s award 3 times at the ‘Kanagawa Prefecture Western Confectionary Contest’.
In 2021 he opened Patisserie Bell, where they continue to meticulously craft and innovate various desserts, and perfecting existing favourites in their own special way.

Thaw in the refrigerator approximately 7-8 hours in advance to enjoy the smooth texture of the cheese and cream. Before eating, leaving it at room temperature for about 10 minutes will further soften the texture.
