Importing Oysters
There’s a strict requirement that fresh oysters can only be imported to Singapore from these six countries: UK, New Zealand, Australia, France, US, and Canada. 
Frozen oysters, on the other hand, can be imported from any country as long as the criteria are met. 
However, it was not easy to meet all the requirements, such as having a processing facility for freezing, even if the oysters were inspected and certified in Japan.

Vendor Story -Araya Shoten-
While there were other Japanese suppliers who were distributing frozen oysters from Hiroshima, its quality was not so good. 
 As Araya shoten decided not to compromise on both quality and price, it took about four years for them to distribute oysters to Singapore. 
 Araya shoten tried to do business with a fishing cooperative in Hokkaido but was not able to find oysters that meet their criteria. In the three years of looking for oysters in Hokkaido, they have tried working with four suppliers but ended up giving up due to problems with documentation, freezing techniques, and improvement issues. 
 However, when Araya shoten visited Yamada Bay Town in February 2020. They took a boat ride with a fisherman there and were shown the sea where oysters were grown. They finally found the one they were looking for and decided to distribute it right away!

Why Yamada Bay Oysters?

  2. A group of fishermen called The Sanriku Yamada Oyster Research Association is dedicated to improving the quality of oysters. 
  3. Conformable environments for oysters to grow without any stress. 
  4. Freshness is maintained by a freezing method that has been thought out through a number of trials and errors.

 Marukyou's Bafun Uni is purchased directly from Toyosu market, and everything is hand-picked. 
Only selected ones that can only take 3 kg out of 100 kg are sold as their Uni! 
About 1200 packages are supplied to Singapore each month, and most of the total supply goes to restaurants, so it is quite rare for individuals to get this quality sea Uni!

How it's Different from Others?
The biggest difference between our Ikura and others is the way they are frozen. 
Usually, foreign Ikura is frozen once when it's caught, and then the roe is removed from the belly and frozen again (two freezes in total!). 
However, our Hokkaido Ikura is taken out of the belly and frozen on the boat right after it is caught! (Being frozen only once!)
