Suiro Junmai Daiginjo

It has an elegant scent, light and clean taste, and a silky, velvety texture.

Using the best sake rice, Yamada Nishiki, it is brewed well at a lower temperature that gives happiness with its luxurious umami.

This "Suiro" is "Maihime Brewery", which has been deeply rooted and loved in the local area.

Due to the strict idea of the brewery that it only wholesales to the routes that are well-established, such as refrigeration management.
The sales route of Suiro is particularly narrowed down only to local sake specialty stores, which are different from ordinary products.

    Junmai Daiginjo's rice polishing ratio is 50% or less while its Junmai Ginjo is 60% or less. Generally, the rice used for sake brewing is said to have a refreshing and fruity taste as it's polished more and more yet it takes time and effort. As we can tell from this fact, 39% of the polishing ratio is an astonishing number within the world of Sake.

  3. Junmai Daiginjo

    This means that it is made from purely rice and koji, nothing else is included. 

  4. Yamada Nishiki 100%

    It’s known as one of the best brewers’ rice in Japan. Not only this fact but this Suiro is also made from 100% Yamada Nishiki.

Maihime -Suiro Brewery-

Maihime's sake is brewed lovingly by the brewers based on traditional methods passed down from generation to generation since 1894. 
Sake from Maihime is brewed with the clear underground water that originates from the Kirigamine Plateau. 
In 1999, Suiro was released only for exclusive members that have a connection with Maihime. 


Maturing Environment

Maihime, Suiro Brewery is located in Suwa City, Nagano. 
In addition to its clean water and clear, cool air, its winter weather, and comfortable climate during summer make it a perfect place for sake brewing.
