It is like enjoying exploring and finding the beauty in Kochi’s countryside!
This is a traditional sushi from Kochi, that uses seasonal and edible wild plants / vegetables blessed from the Kochi mountains.
To committed further living as earth and animal-friendly as possible by avoiding meat, fish, eggs, dairy products, and other animal-derived ingredients and seasonings in their diet, this traditional sushi was enhanced to suit the vegan diet.

Vegan Chirashi that can enjoy with appearance and taste
It is a gorgeous chirashi that is perfect for special occasions, or for those who want to experience something a little different. Handmade Konjac with a rich flavor, crispy shiitake mushroom stew, and yuzu skin stew.
The representative of mountain chirashi is shiitake mushrooms. Shiitake mushrooms soaked in plenty of broth have a rich and satisfying flavor.
Kochi's famous Japanese red ginger marinated in vinegar with a slightly sweet taste, sweet potatoes simmered in honey with a lot of lemon flavor.
These are just a few of the ingredients that are essential to Tosa countryside chirashi!

Tosa Inaka Sushi has two main characteristics:
Rice using “yuno-zu”, a yuzu-based sushi vinegar, and ingredients are seasonal, wild vegetables blessed from Kochi mountains .
1. Rice:
The sushi vinegar is made from squeezed yuzu called Yuno-zu. Since ancient times, the mountains of Tosa, have produced many citrus fruits such as yuzu, buchkan, and daidai.
The ancestors have squeezed them at home to make sushi for celebrations and special occasions, and have continued to enjoy the vinegar.
*Buchkan...is an evergreen shrub of the mandarin orange family, and is a type of fragrant citrus, like "yuzu", Daidai...is an evergreen tree of the mandarin orange family, and its fruit.
2. Ingredients:
Each of the 12 sushi dishes is filled with the plant-based ingredients of the mountains of Kochi.

How to Enjoy
”Always defrost in the microwave!"
Please do not defrost at room temperature or in the refrigerator.
Guideline for defrosting
500w ・・・ 3 min - 3 min 10 sec
600w ・・・ 2 min 20 sec - 2 min 30 sec
*After defrosting in the microwave, allow to cool at room temperature for about 10 minutes and remove heat before serving.
Remove the outer film and lid, and remove the dividers from the container.
Place each of the four portions of sushi on a plate, cover with wrap, and microwave in a standard microwave oven.

Story of Tosa Inaka Sushi
Tosa Inaka Sushi is a project started by Kochi Prefecture to introduce Tosa's traditional culture, country sushi, to the world.
The project started in 2018 with the participation of a group of local women in Kochi Prefecture, professional chefs and cookery researchers.
The company was invited to participate from the beginning of the project and worked together to develop the product, which was completed in April 2021, unveiled in June, and started selling.
Tosa Inaka Sushi won the grand prize in the lunch box and side dish category at the 2018 Supermarket Trade Show.
Since they originally ran a rice shop, they are very good at making Tosa Inaka sushi that makes rice taste good, and they won the grand prize by impressing the judges.
Kochi Prefecture Collaboration
It is blessed with great natural beauty, including the Shimanto River, said to be the last clear stream in Japan, the magnificent Pacific Ocean with the Kuroshio Current flowing through it, and the Shikoku Karst, one of the 3 major karsts in Japan.
The area is also home to some of the best surfing, paragliding, rafting, fishing, and other activities in Japan.
Kochi is also famous for its local foods such as bonito, which is the prefectural fish of Kochi and a representative food material of the region, gamecock, which was loved by Ryoma Sakamoto, and Tosa red cow, which is called "fantastic wagyu beef," as well as local cuisine such as saabachi dishes and country sushi with yuzu vinegar.
In the past 14 years, it has been ranked No. 1 seven times in Jaran's (one of the largest travel companies) ranking of "the most delicious foods unique to the local area.
