Dedication to high-quality plums cultivated in Ishikawa
The ingredient of Kaga Umeshu, Benisashi Ume (紅映梅) is a highest-class variety that is a local specialty in Ishikawa. It contains more amino acids and minerals than other general high-class varieties, so it’s rich in umami and mellowness. Due to this feature, it’s likely to be used for high-class Umeboshi as well.
However, cultivating it is not easy and needs technique. In addition, it’s rare because of the low yield. The same part of the branch bears fruit only once every three years.
The plum farmer that provides Benisashi Ume for Kaga Umeshu took 10 years to cultivate it very well at the beginning suffered from black spot. Now, they grow Benisashi Ume every year with their policy that doesn’t use chemical fertilizer and their knowledge to branch pruning, which is the most important part of the cultivation of plums.
A blessed environment with the miraculous water
An essential ingredient is water. Ishikawa prefecture is blessed the most with high-quality water. Using the clearest water, it is a unique umeshu that can be created only in Ishikawa Prefecture.
Water for Kanazawa 15 years comes from one of the most famous mountains in Japan, Mt. Hakusan.
It’s known for a long time among local people to provide the cleanest soft water that contains moderate minerals, so it’s called “A God of water”. Snow on the top of Mt. Hakusan is slowly filtered through the blessed stratum for several decades to about 100 years. That makes the water most beautiful and clear.
This sacred water in Ishikawa prefecture makes Kaga Umeshu quite special.
