Taste Story of Kondo Brewery
It is a brewery founded in 1878 and is the only remaining brewery in Niihama City, Ehime Prefecture.
It is located near Tsuzurafuchi, one of the 100 best waters of the Heisei era and brews Niihama's only locally brewed sake with soft water drawn from a deep well 110 meters underground and sake rice produced by contract farmers in Niihama City.
The brewery has been in existence for five generations since the Meiji era (1868-1912), but was actually closed temporarily during the fourth generation due to the shochu and wine boom.
Yoshiro Kondo, the fifth generation of the brewery's founder, wanted to revive the brewery, and in 2001 he became toji (master brewer) himself and resumed in-house brewing.
