Tamago Family, is a store directly managed by an egg farmer in a mountain village in Kochi prefecture, who has devoted himself to eggs for 40 years.
The concept of the store is to "let customers taste the deliciousness of high-quality ingredients as they are," without the use of any additives such as shortening, emulsifiers, or flavors.
However, despite this strong commitment, the dough would not puff up properly without baking powder, and other difficulties came over and over.
It took about 3 years for the store to open after many failures, but they finally arrived at a simple answer - go back to its roots as an egg shop and use fresh eggs caught that morning.
The eggs they use at Tamago Family are only those that are sent directly from the farm that morning. They are confident in the taste of their egg
